Ube · Dioscorea alata

Spray-dried Ube (purple yam) powder from cooperative farms all over the Philippines, where the variety has been cultivated for generations. The powder retains the deep violet colour and earthy-sweet flavour of fresh ube. Used by patisseries, ice creameries, specialty coffee roasters, and beverage manufacturers.
