Unrefined cane sugar milled at origin in Negros Occidental, the sugar island of the Philippines. The cane is pressed and the juice boiled down without stripping the molasses out, which is what gives muscovado its deep colour, moist crumb and caramel aroma. Available light, dark and crystallised, in the season from November to May.

Nothing is refined out and nothing is added back, so the sugar carries the caramel and liquorice notes of the cane itself. Chocolatiers and bakeries use it for depth, and it melts into syrups and finishing sugars for specialty coffee.
